Shrimp and Mixed Vegetables Recipe 

This is usually my mid-morning meal to hold me over between breakfast and lunch. Its a little lighter in volume but it can hold you over in-between heavier meals.  It only takes a about 5-8 minutes to make on the stove.

Ingredients:

 

-50 g of Minute Maid Brown Rice*

-156 g of Thawed Medium Shrimp*

-85 g of Daily Chef Mixed Vegetables*

-3.5 g of Coconut Oil

 

Cooking instructions:

Put the brown rice, coconut oil, and Mixed Vegetables in a micro-wave safe container and turn on for 1:35. Let it sit for about a minute and micro-wave again for 1:35. At the same time add shrimp into a skillet or wok with a tablespoon or two of water. Put on high heat and cover with the lid. Let it cook for about 4-6 minutes. Make sure to stir occasionally. Take out the rice and veggies and add to the shrimp and be generous with the spices you like. Cook for another 2-4 minutes stirring occasionally or put a lid on the pan remove from heat and let is sit for another 2 minutes. Enjoy!!!
